Can i create a mobile app with variable subscription prices?
I want to create a mobile app where users can choose & set a custom subscription price of their own. I'm not sure if this is possible on iOS or android. Can i do something like this on these platforms?

Check out the "Jumbo" app on iOS, they do something similar. The "jour" app also used to do this but not sure if they still do.
I think you will have to create a different "product" for each price on the iOS (app store connect) side. So the user won't be able to input an arbitrary value but they could choose from a list of prices
