Deliberately pushing customers away. Template websites?

Hi all - so I used to be in the dental industry & decided to quit & go into tech. I started out back in 2013 some freelance websites and made some happy clients but it wasn't for me. I figured if I'm trading time for money I'd rather employment. At least until another side venture inspires me.
But here's the thing - almost all those clients stayed on some kind of retainer and I still get the odd enquiry. And my website is non existent. I literally have a paragraph explaining I'm no longer taking clients.

I was wondering - does anyone know of any really nice html templates that would work for this? I don't want to maintain multiple images and clients - maybe a screenshot for 2 or 3 sites I've done and that's about it. There's not much else to say.
But all agency type templates I see are for full scope services and portfolios and addons and the list goes on.
And all templates smaller than that for solo-freelancers are self-branded which doesn't really work for me because I LEFT the industry so despite the advantages the experience gives me, it doesn't sell well.

Thoughts on what I should try here? Or what I could check out?
