We've only had to send one demand letter. Most of our customers pay but we just had a large customer cancel and I think they're not going to pay for their final two months.
Do I need to have a lawyer on full retainer to have them put together a demand letter?
Can anyone recommend anyone ?

I saw this video long ago and hired the lawyer, Gabe, in it (starting @ timeline 7:30).
They focus on client services but I was running a software product business at the time, Gabe still worked out great:

At the time he only needed a $3k retainer to get started and his hourly (again, at the time) was reasonable.
Is it worth the effort? what is the value of the non-payment?

Ouch, not an insignificant chunk.
I'm not really experienced in that kind of stuff, if it were me I'd try to ask kindly, may raise the concern to their higher up bosses? Then perhaps look for low cost ways to pursue it.
I always view my time as my money, and these things can be stressful to deal with. I'd personally be hesitant to spend money on a lawyer to recuperate it, you could end up losing a lot of time and money on it.
