Easy to use note-taking apps?

I get very distracted and frustrated when apps aren't easy to use in the way I need to use them. It's just always been a problem, because I tend to keep quite a fast pace when taking notes, whether out of choice or necessity. Google Docs is particularly bad for me- things never end up how I want them, where I want them, and I have to spend countless minutes trying to figure out how to move or do something.

I also tend to make intricate systems of folders for organisation that are often called wildly excessive.

Does anyone have any suggestions of note-taking apps that are easy to use at a fast pace and with minimal distraction but that can be organised? Is anyone working on such a thing?

    If you're a developer I'm working on Knowhup.

    It's for developers to create & organise code related notes and other technical notes. But technically you can use it for anything :)

    What's the most irritating thing about Google Docs?

      Its really just the fact that things never end up where I want them, or something glitches out, and in general I find it quite hard to use for things at a fast pace.

    No working on it, but I recommend Dynalist. I'm linking to the demo, because it let's you immediately start making things happen and see if that would work for you.
    Also, it's pretty minimal, but extensible in themes and CSS.
