I agree, there is no option for collecting continuously, we have added it.
We didn't mention "user data" in the survey but wanted to ask about "data". I agree, it is a broad term, but we didn't land on a better term as of yet. I think, "insights" is what we get from data (after some kind of analysis and processing).
I would love to hear more about your use cases, how you collect data/insights, what type of data and how you use it, and whether you collect information from interviews, surveys and general communication with your customers.

I don't understand your questions "How long does it take to collect the data? *". In my team we are collecting data/insights from our users continuously.
Also the term "user data" is too broad to imagine something concrete (maybe user insights?).
