Multiple products: use single domain or individual domains?

So, I have a site that serves one product well, but I have some other apps coming as well. They are not functionally related, but perhaps would share some broader SEO like being Mac apps and stuff like that.

Not sure if I should put the newcomer under a subpage so it could enjoy a higher domain authority or start from scratch for that one. Having it as it's own domain would perhaps be 'cleaner', but would make cross-promotion less effective and wouldn't really want to put time to working up SEO for both.

The link structure matters more than the domain vs subdomain

With a new domain you can't leverage existing domain authority and backlinks though right?

Or is there some shortcut to that via specific link structure?

The domain is not necessary it's own object really. (or what I mean it can be highly discounted for some cases...)
A site is the object, while it's hard to describe exactly the closest thing would be the link structure
The easiest proximity is the site menu, if it's the same across the site it's one site, once it breaks, these are different sites

There are many platforms that have different sites on them, either by subdomain or subdirectory, they aren't equal SEO wise (or otherwise)

Compare a big company site that has "products"
        vs a platform like wordpress/blogger...

When the products are sub-pages under one site it's different than, each of them has it's own sub-site
