No code or code it yourself
I'm currently building the MVP of a platform where it helps brands to search & hire local influencers for marketing campaigns.
I'm a software engineer myself, should I build the product with no code tools or build the entire platform by myself.

That sounds interesting. Will the platform be built for a national or international audience?
I'm currently working on a tool that might be able to solve all this for you. The end result is just html and Vuejs code so no vendor lock-in if you decide to export.
You can save data into https://supabase.io/ and that will also provide auth as well.
For MVP you can just invoice customers using stripe (i'm still thinking how to connect stripe and supabase no-code style)
