No/Low Code tools with 3D-like database/spreadsheet capabilities?

This is kind of hard to explain, but let me make an analogy. I'm looking to build a prototype of software for planning in a certain field.

Let's say for example you're planning a big camping trip and you decide to literally create a table of sticky notes on your wall, think of a spreadsheet layout with rows and columns of sticky notes. You don't have much room in your backpack so you want to use your wall to help you plan what to take.

The leftmost column is the category, for instance food, clothing, cookware, shelter. Each of the columns to the right of it are the objectives, so for instance if we focus on clothing, you might have the columns "rain", "wind", "temperature" etc. You might have a selection of 5 different coats in your closet, so you might write down the names of those and put 3 sticky notes for some of the coats under rain because they are waterproof and 2 under wind because they are good windbreakers. Or maybe you want one of the coats under both, since it's good in rain and wind.

At the END of your planning, you'll have removed all but one sticky note, so it will resemble a normal 2D spreadsheet. But DURING planning, it will be a 3D spreadsheet because some row/columns will have multiple values, or sticky notes stacked.

Is there low/no-code software that will enable me to accomplish this?
