I was wondering what do you all recommend for processing payments and tracking user licenses in the app?

Depending on your country, a merchant of record like Paddle could help a lot with the tax handling. There are a lot of integration points for the checkout, but basically licence handling you need to implement yourself. I think there are some tools available for that as well, but not sure if they really make your life easier.
