I'm starting a new project and am trying to decide between a .app, .io, and .co domain (.com is not available, but it's also not currently in use).
What would you recommend? It's for a B2B SAAS application targeting medium to larger sized businesses.

io - because of how much it has been used in the recent years, it kind of grew some credibility I'd say. People now know it.
But if I was you I would look for alternatives to still use the one and most popular domain you can use...c o m
I'd lean toward the .io since I've noticed people will often mistype/misremember and enter ".com" when it's a.co and once someone buys that .com domain it may be an issue. This is an addition to the fact that people may accidentally send emails to you@yourwebsite.com instead of you@yourwebsite.co (I get emails from people who clearly meant to send it to the .co version of one of my .com sites.)
I do think .co is just as professional sounding as .io to be honest, so if you're willing to roll the dice with typo's, than all power to you. :)
(I suppose people misremembering will be a risk regardless of the extension, if it's not a .com).

You should not use a mailto link for your website email address.
You can hide your email address behind a fun scratch card -- scratch to reveal the email address. It makes sure it's a human and not a spam bot. veilmail.io
Bit of thread hijack: But I looked into the veilmail code and your "email scratch cards" are just wrapping a mailto: link with a html canvas container, and your UX doesn't allow the post scratched email to be copied/pasted or clickable (bit cumbersome). Sure this would reduce bots that are just searching for DOM text. But a bot/crawler that is searching for mailto: links would still find the email address in your code. You might as well just export the email address as an embedded image, it would have the same useability (lack of copy/paste) without the faf of scratching.
I associate .io with small tools - think https://keywordtool.io/
.co means company or corporation and is associated with a larger-sized company. It's pretty neutral and serious.
.app feels more on the "fun" side of things, similar to .io
If you're going for a real professional vibe, .co is the best.
I agree - I tend to think of .io as small tools or tools aimed at a technical / developer audience.
.co is looking like the winner.

For B2B SaaS, I would ask you additional questions.
Is your SaaS a data, analytics, dev-tool, hardware-related startup?
If yes, then use .io domain
If no, is your B2B SaaS just a web app? Or also downloadable on the Google Play Store, ioS App Store?
If also downloadable, then .app domain
Otherwise, then use .co domain and contact the domain owner of the one you actually want using who is search or registar enquiry (if set to privacy). And enquire about domain purchase, if amount too high, negotiate down, arrange a payment plan with them, or make it your future major purchase.
My SAAS is a B2B web app, but aimed at a non-technical audience, so I think the .co domain looks like the best option. The .com id available, but the cost is well out of my price range. Maybe if my app takes off I'll see if I can get the .com domain.
I’m sure this is an outlier opinion, but does the .com have a buy it now price? Depending on your that, budget, traction etc I would consider trying to acquire your brand match .com esp for b2b (cet par .com still signals establishment and trust). I recently changed my opinion on TLD extensions and have become a bit of a .com maxi. Tim Ferriss interview with Andrew Rossner was the turning point.
The .com is available by negotiation, but the indicative price range is well outside my budget at the moment. It's something I might come back to if my app takes off, although if it does I guess that would make the .com even more expensive to buy.
Totally get that. Could always throw a low ball offer out there in case they haven’t seen much interest in the name.
In short: doesn't matter that much, just choose one and build it.
If you can, get all others and redirect them to the main domain
.com not being used is a plus for you to build your brand first.
I personally would never recommend using .co without the .com domain: I don't like the idea of people confusing them and not finding me – or worse not even knowing about .co
.io is rather tech-focussed. If that's your target audience, it would work. If not, .app is a safer bet.
The risk that someone is looking for my site but types .com and ends up somewhere else is the thing that is most making me consider other domains. The .com is too expensive for me to buy at the moment though, so it's probably a risk I'll have to take until I get product / market fit.
