Would you pay for them?

Would you pay someone to sit down with you for a 15-30 min to discuss problems they face?
Just to clarfy, so would I(you) pay the person(they) with the "problems" to tell me about them?
You're compensating that person for the time they sit with you and have a discussion... I'm trying to find some means of leverage for having these types of conversations for local shop owners. After talking about it a bit, I think it's a bit too formal, I was actually thinking of doing something like showing up to that shop with lunch or a round of coffee. People don't want to waste their time by any means, so finding a way to connect with them on a more personal level is what I'm trying to figure out going forward.
I would be more inclined to do it online via a chat of a voice call. Depending on the price of course and the credibility of the person I am talking to.
I personally believe that an in-person conversation will tell you a lot more i.e. body language, tone, work environment, etc.
